Celiac disease is a disease characterized by a permanent intolerance to gluten, the main protein in most cereals that we currently consume. This intolerance causes damage and gastrointestinal discomfort to those who suffer from it and means saying goodbye to all those foods that contain gluten. However, there are many other gluten-free foods that you can eat.
First of all, what is gluten?
Gluten is the main protein in cereals such as wheat, barley, rye, and oats . In those who develop celiac disease, this protein causes an inflammatory reaction in the small system that makes it difficult to absorb nutrients from other foods, so the most frequent symptoms of those who suffer from this intolerance are weight loss and appetite, vomiting, diarrhea, gas and indigestion .
Forbidden foods for celiacs
Obviously, all those that contain gluten, such as: flour, bread and derivatives of wheat, oats, rye or barley. Also pasta and semolina of said cereals. Also chocolates, sweets, candies and nougats, as well as instant coffees and teas, or canned foods, such as mussels or canned tuna.
What foods are allowed for celiacs?
Milk and its derivatives: cheese, butter, cream…
Also meat and fish, fruits and vegetables or eggs.
On the other hand also rice, corn and tapioca, or oils, both olive and sunflower.
Of course, as long as the manufacturer indicates on the product label that it does not contain gluten, there will be no danger of consuming it despite being on the initial list of prohibited foods.
As you can see, and although gluten is currently artificially added to many foods, there are many others that are free of this protein, so being celiac is by no means saying goodbye to a healthy and balanced diet full of nutrients.
